Stuffed bell peppers


The 70’s called… so I invited it to dinner!

It dawned on me today. This blog means that I have to make up 365 different dinners. Because, let’s face it, eating something over and over can get pretty boring. Reading and writing about it gets old really quickly.

So today I went all the way back to the 70’s for inspiration. Stuffed bell peppers isn’t something you eat everyday, but it’s actually a nice dish. And it’s a great leftover dish, if you happen to have any bell peppers over…
Mine were stuffed with ground beef, onions, garlic and some canned tomatoes. But you could hade egg as a base instead, make kind of a frittata, or whatever-you-happen-to-have-in-the-fridge. Give it a go!
