Chicken Soup


Time for that homemade chicken stock. I’m never going back to store bought…

A couple of days ago I made some chicken stock from scratch, just because I’d never done it before. But by the time it was done and cooled down to skim of the fat, I didn’t really have time to make anything with it. So I stuck  it in the freezer for another day. And that day was today!

A cup of chicken stock, some diced up carrot and celery,  some leftover chicken, grated ginger, chili flakes and garlic. Just bring it to a boil, let it simmer for a couple of minutes, and it’s instant chicken soup. Delicious, and perfect on a cold winter evening.
